Vegan I Gluten Free
Serves: 12-15 fritters
Time: 30 minutes
2 tbsp. flaxseed meal + 4 tbsp. water
2 large honey crisp apples (peeled, cored and chopped)
1/2 lemon, juiced
1 cup almond milk
1/4 cup coconut oil, melted
1 tbsp. maple syrup
1 1/2 cup Gluten Free Flour Blend
1 tbsp. coconut sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. all spice
1/4 tsp. Himalayan pink sea salt
1 pinch ground cardamon
Organic Canola oil for frying
Glaze:
1/2 cup raw cashews
1/2 cup powdered sugar
1/4 cup almond milk
1 tsp. vanilla
Combine the flaxseed meal and water in a small bowl. Stir and set aside for at least 5 minutes to thicken.
Peel and cut the apples into small cubes and place in a bowl. Squeeze the 1/2 lemon over the apples to keep from browning. Set aside.
In a medium bowl combine the almond milk, coconut oil and maple syrup. Stir to combine. (Note: if the coconut oil hardens, add a couple inches of hot water to a larger bowl, place the medium bowl inside the larger bowl to float, and stir gently, allowing the heat to re-melt the oil.) Add the flaxseed mixture and stir.
In a separate bowl add the dry ingredients: GF flour blend, coconut sugar, baking powder, and spices. Stir. Slowly add the wet ingredients into the dry bowl and mix all together. Stir in the apples, leaving out the lemon juice that's accumulated at the bottom of the apple bowl.
Place the mixture covered in the fridge for 12-15 minutes.
Prepare the glaze: add all ingredients into a blender or food processor and mix until smooth. Set aside.
In a large frying pan heat 4-7 inches of the organic canola oil over medium heat. When hot (roughly 350 degrees) begin to carefully release batter into the oil in small-medium size dollops (what ever size you want your fritters). I recommend for the first fritter doing just a tiny bit of batter to test the oil. Fry for roughly 30 seconds on each side. Using a slotted spoon, remove the fritter from the heat when golden brown and transfer to a cooling rack or plate covered in paper towel. (Note: if the oil begins to get too hot, lower the heat or remove the pan from the heat and continue to fry carefully. Don't let the oil burn. Place the pan back on the heat as it cools.)
Once all the fritters are fried, drizzle with glaze and cinnamon and enjoy!
