Apple Strudel

6 rice papers

2 tbsp. coconut oil, divided

2 tsp. cinnamon, divided


Cinnamon Apples

3 apples, cored & diced

2 tbsp. coconut oil

1 tbsp. cinnamon

1/2 tsp. stevia powder

1/2 lemon, juiced

1/3 cup walnuts, crushed

1/4 cup raisins


Toppings

Raisins

Walnuts

Cinnamon

Coconut shreds

Preheat the oven to 180C/350F and line a baking sheet with a silicone mat or parchment paper. Set aside.


To prepare the cinnamon apples - Chop the apples into small cubes. In a large skillet heat 2 tbsp. coconut oil over medium-high. Stir in the cinnamon and stevia. Add the diced apples and stir to evenly coat. Add the lemon juice and stir. Sauté 5 - 7 minutes, until tender and beginning to brown.


Stir in the walnuts and raisins. Heat an additional 3 - 5 minutes. Remove from the heat. Set aside.

To prepare the wraps - Place a large piece of parchment paper on a clean, dry surface; large enough for 3 overlapping rice papers side by side. Add 1 tbsp. coconut oil and 1 tsp. cinnamon to the parchment paper and spread.


Fill a shallow bowl with 3 - 4 inches of water. Make sure the bowl is wide enough for the rice paper to soak. One at a time, place a rice paper into the water and gently massage, you want the paper pliable yet thick, 15 - 20 seconds. Transfer the rice paper to the prepared baking sheet, holding the edges to keep the shape. Continue the process, until you have 3 rice papers overlapping 3 - 4 inches, in a row.


Spoon half the apple mixture in the central line of the 3 rice papers. Start 2 - 3 inches from the short edges and keep it in an ~2 inch wide line. Fold the short sides over the mixture. Fold one long side over the apples. Fold the second long side over the apples and continue to roll it until closed. You should have a long 'snake'. Curl one end and begin to spiral the long coil until it's rolled into form.


Repeat the process until all ingredients are used and you have two apple strudels. Transfer the strudels to the prepared baking sheet.


Bake for 20 - 25 minutes, until golden brown.


To serve - Let cool slightly before serving. Top with raisins and crushed nuts.


To store - Best served fresh. Keep 1 day in the fridge.
