Two ingredient vegan, gluten free tortillas! This is an amazing recipe because it's a simple, healthy, satisfying, & nutritious! You can make your tortillas savory or sweet and fluffy like pancakes. It takes just 20 minutes to make and the mixture stores great in the fridge to have for meal-prep. Give it a try and let me know what you think of this recipe!? Me - I think it's life changing!
Vegan I Gluten Free
Serves: 8 - 10 tortillas
Time: 20 minutes + overnight soaking
Buckwheat Tortillas
3 cups buckwheat, soaked overnight
1 1/2 cups water
1/4 tsp. salt (optional)
Avocado Pesto (tutorial video - click here!)
2 avocados
1/2 cup sunflower seeds
1/4 cup olive oil
1 lemon juiced
1 bunch thai basil, ~2cups
2 cloves garlic
Salt & peppe to taste

To prepare the tortillas - Rinse your buckwheat. Add your buckwheat to a bowl and cover with 2 -3 inches of water. Let rest overnight, 8 - 10 hours.
Once the buckwheat has soaked, strain and rinse.
Add your soaked buckwheat, 1 1/2 cups water & salt to a food processor or blender. Mix on medium-high speed until smooth and thick.
Heat a large skillet over medium-high heat. Once the pan is hot add ~1/3 cup of the tortilla mixture to the pan. Use the back of a wooden spoon to spread the mixture in a circle or gently rotate the pan in a circular motion.
Let the mixture cook 1 - 3 minutes, until bubbling and the bottom side golden brown. Gently flip the tortilla and cook an additional 1 minute.
Work in batches until all the tortilla mixture has been used.
Note: you can store the blended buckwheat tortilla ingredients in the fridge 1 - 3 days and use as needed. The mixture will begin to thicken with time but keeps well!
To prepare the avocado pesto - add all ingredients into a food processor or blender and mix on medium-high until smooth and creamy.
To assemble your tortillas - spread a layer of avocado pesto onto each tortilla round. Top with additional fresh veggies, herbs, etc.
Enjoy!
Store leftovers in the fridge 1 - 2 days.
