8 - 10 bananas
Cinnamon Mixture
1 cup dates
1/3 cup nut butter
1 tbsp. cinnamon

Preheat the oven to 180C/350F. Line a baking sheet with a silicone mat, parchment paper, or slightly grease with coconut oil.
Pit your dates and place them in a bowl. Cover with 1 - 2 inches of water and let soak until soft, 10 - 20 minutes.
Slice your bananas in half, lengthwise. Place them face up on your prepared baking sheet.
Bake your bananas until soft, 25 - 30 minutes.
To prepare the cinnamon mixture - Drain your soaked dates, reserving the water. Add all ingredients + 1/2 cup reserved date water to a food processor or blender. Mix on medium-high speed until smooth and creamy, 1 -2 minutes. Taste and adjust as needed.

To form cinnamon rolls - Let your bananas cool until you are able to handle them. Transfer your bananas onto a plate, side by side. Use a spoon to spread the frosting over the bananas and evenly coat them.
Take a banana slice and begin to roll it over itself. When you near the end, 1 - 2 inches remaining, tuck a second banana slice in and continue rolling. Use 2 -3 banana slices per cinnamon roll.
Continue the rolling process until all banana slices are used.

To serve - Place your cinnamon roll slices on plate and garnish with toppings. Serve with extra frosting if available.
Best served fresh or store leftovers 1 - 2 days in the fridge.
