Serves: 2 - 4 people

2 large sweet potatoes, sliced & wedged
1 tbsp. coconut oil
1 tsp. dried thyme or rosemary
Salt and pepper to taste
Preheat the oven to 200C/400F. Line a baking sheet with a silicone mat or parchment paper.
Cut the potatoes into your desired 'French fry' shape / width. Place the fries in a sauce pan and cover with 1 - 2 inches of water. Heat the pot over medium-high heat for 4 - 6 minutes, until the potatoes are tender yet still firm.
Drain the water and transfer the potatoes into a large mixing bowl. Add the oil and spices. Gently stir to combine and evenly coat.
Spread the potatoes onto your prepared baking sheet in a single layer.
Bake for 15 - 20 minutes, until golden browned!
Enjoy fresh or store leftovers 1 day in the fridge! Reheat in the oven.
