Time: 15 minutes
1 cup quick oats
2 cups coconut milk
1 tsp. beet root powder
1 tbsp. maple syrup or honey
1/2 tsp. vanilla (optional)
Grilled Banana
1 tbsp. coconut oil
1 large banana, sliced
Toppings
Coconut shreds
Vegan dark chocolate squares
Cinnamon
Roasted peanuts
Maple syrup or honey

Add all ingredients to a small sauce pan and bring to a boil over medium heat. Once boiling, reduce the heat to low and cook until tender, 4-6 minutes. Stir occasionally. Add more liquid to adjust consistency, depending on how you prefer the texture of your oats (more runny or thick).
To sear the banana slices, heat 1 tbsp. coconut oil in a small skillet. Once hot, add the slices to the pan and heat 1 - 2 minutes per side, until golden brown.
Transfer the oat mixture into two bowls and top with the warmed banana. Decorate with your favorite additional toppings.
Enjoy warm, best served fresh!
