Vegan I Gluten Free
Serves: 2 parfaits
Time: 10 minutes + overnight soaking
1 cup coconut milk
1/4 cup chia (or basil) seeds
1 cup frozen organic blackberries
2 frozen bananas
1/4+ cup water
Toppings:
Fruit
Unsweetened coconut flakes
Nuts
Seeds
Granola
In a jar or container, combine the coconut milk and chia (or basil) seeds. Stir well. Let rest for 5 minutes and then stir again, breaking up and clumps. Place in the fridge overnight (or until the seeds have absorbed the liquid).
When the seed mixture is ready, blend the berries, bananas and water. Add more liquid to adjust consistency.
Pour the berry smoothie blend in your parfait glasses. Evenly divide the seed mixture among the two. Decorate with your favorite combination of toppings.
Serve immediately, while the smoothie is still cold!
