Chickpea cookie dough balls! It's a vegan, gluten-free dessert / bite of bliss that you can enjoy guilt-free! I use whole, real and fresh ingredients for this edible cookie dough. It's naturally sweetened so you don't even recognize the beans! Make a batch of cookie dough balls to top on your morning smoothie bowl for a protein boost or enjoy making a cookie dough cake! It's a healthy dessert the whole family can enjoy!
Vegan I Gluten-Free
Serves: 20 - 25 cookie dough balls
Time: 15 minutes
2 cups chickpeas, rinsed & drained (or 1, 15 ounce, can chickpeas)
1/2 cup peanut butter (or nut butter of choice)
1/4 cup almond flour
1/4 cup coconut sugar
2 tbsp. maple syrup or honey
1/4 tsp. salt
1 tsp. vanilla (optional)
Soak dried chickpeas overnight in water and boil 30 - 40 minutes or use 1 (15 ounce) can chickpeas rinsed and drained.
Add all ingredients, except the chocolate chips, to a food processor (in this case will work best) or a blender. Mix until well combined.
Transfer the mixture into a mixing bowl with the chocolate chips. Stir to incorporate.
Use your hands to form bite size cookie dough balls.
Best eaten fresh! Place in the freezer for optimum storing!
Note: They will keep in the fridge 1 - 2 days in an airtight container but the bean flavor will become stronger with time.
