This creamy, gluten-free 'risotto' is made with buckwheat, mushrooms, and wholesome ingredients! It's a vegan, dairy-free meal that takes less than 30 minutes to prepare. You get lots of nutritional value from superfoods like buckwheat, nutritional yeast, mushrooms, spices, & more. Adding a few tablespoons of truffle oil takes the taste to the next level! Serves: 2
Time: 30 minutes
2 servings buckwheat, soaked overnight
1 tbsp. coconut oil
3 cloves garlic, minced
1 cup shiitake mushrooms, chopped
1/2 cup baby Bella mushrooms, sliced
1 1/2 cups water
1 cup coconut milk
2 tbsp. apple cider vinegar
1/2 lemon, juiced
1 tsp. lemon zest
2 tbsp. nutritional yeast
1 tsp. turmeric
1/2 tsp. onion powder
2 cups leafy greens (spinach, kale, collards, etc.)
2 tbsp. truffle oil
Salt & pepper to taste

Add your buckwheat groats to a bowl and cover with 2 - 3 inches of water, soak overnight.
Rinse and drain your buckwheat, set aside.
Heat a saucepan with coconut oil over medium-high heat. When hot add your minced garlic. Sauté 30 - 60 seconds, until fragrant.
Add the mushrooms to the pan and sauté another 2 - 4 minutes, until tender.
Add your strained buckwheat, water, coconut milk, vinegar, lemon and spices to the pan and stir to combine. Bring to a boil then reduce the heat to medium and simmer 12 - 15 minutes, until thick and creamy. Once the buckwheat is cooked, add the remaining ingredients, leafy greens, truffle oil, salt and pepper. Cook 2 - 3 more minutes until the greens are wilted.
Remove the pan from the heat and divide evenly among 2 bowls. Garnish with your favorite toppings.
Serve warm.
Store leftovers 2 - 3 days in the fridge.
