Creamy Parmesan Pasta

Creamy vegan, gluten-free parmesan pasta! Enjoy this beloved classic dish with a plant-based twist! I use wholesome ingredients to support a healthy lifestyle. This 20 minute meal is one the whole family can feast in together or prep and save for meals on the go!
Vegan I Gluten-Free
Serves: 2
Time: 25 minutes
2 tbsp. olive oil
1 tbsp. vegan butter
2 cloves garlic, minced
1 cup vegetable broth (or water)
1/2 cup nut milk
1/3 cup vegan parmesan, grated
2 tbsp.+ parsley, chopped
Salt & pepper to taste

To prepare the pasta - Cook the pasta according to the package. Typically bring a pot of water to a boil. Add the pasta and stir, cooking until tender. Drain the water and set the pasta aside.
To prepare the sauce - Heat a sauce pan over medium high heat. Add the olive oil, vegan butter and garlic. Stir to combine and heat 1 - 2 minutes.
Stir in the vegetable broth and nut milk. Bring to a boil then reduce the heat to medium and simmer 1 - 2 minutes.
Stir in the pasta until well combined in the sauce. Add the remaining ingredients - parmesan, parsley, salt and pepper. Stir to combine then remove from the heat.
To serve - Divide the pasta among two bowls. Garnish with a fresh sprig of parsley and extra parmesan.
To store - Best served fresh. Keep leftovers 1 - 2 days in the fridge.
