Serves: 1
Time: 10 minutes + overnight soaking
Chia Pudding Mixture:
1/2 cup coconut milk
2 tbsp. chia seeds
Smoothie:
1/2 cup frozen blackberries
2 frozen banana
1/2 red dragon fruit
1/2 cup water
Toppings:
Unsweetened coconut shreds
Fruit
Honey drizzle
The night before, prepare the chia pudding mixture. Combine all ingredients in a jar and stir. Let rest 5 minutes, then stir again breaking up any clumps. Let set in the fridge over night.
In the morning, prepare the smoothie by placing all ingredients in a blender and mixing on medium speed until smooth and creamy. Add more water, or alternatively nut milk, until desired consistency.
Transfer the smoothie into a jar and scoop the chia mixture on top.
Decorate with your favorite toppings and enjoy!
