This vegan avocado toast is taken to the next level with the seriously delicious combination of vegan feta cheese, sun-dried tomatoes & herbs. It's a filling breakfast, lunch or snack that's sure to keep you smiling. Not only is this vegan meal nutritious but oh my! delicious! It takes just 10 minutes to prep for a simple, hassle free, healthy meal!
Vegan I Gluten Free
Serves: 1
Time: 10 minutes
2 slices of bread (gluten-free optional)
1/2 avocado, mashed
1/2 lime, juiced
2 tbsp. sun-dried tomatoes
1/4 cup vegan feta (find recipe HERE!)
1/4 tsp. dried oregano
Salt & pepper to taste
Fresh herbs of choice (cilantro, green onion, etc.)

To prepare the toast - Toast the bread to golden brown.
In a small mixing bowl mash the avocado with the back of a fork and add the lime juice. Mix.
To serve - Top the bread with the mashed avocado, sun-dried tomatoes, crumbled vegan feta, herbs, salt & pepper.
Enjoy!
To store - Best served fresh. Keep leftovers 1 day in the fridge.
