Vegan I Gluten Free
Serves: ~2 cups
Time: 10 minutes
16 ounces firm tofu
1/4 cup olive oil
1 lime, juiced
1 bunch cilantro, chopped
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. black pepper
Water as needed
Use your fingers or the back of a fork to crumble the tofu into pieces. Add all the dressing ingredients to a blender or food processor. Blend on medium speed until well combined. Adjust consistency with more liquid (oil/water) as needed.
Taste and adjust seasoning.
Best served fresh or store 1-2 day in the fridge in an airtight container.
