Vegan I Gluten Free Serves: ~4 cups
Time: 15 minutes
4 avocados, skinned and seeded
1 ripe organic tomato, seeded & diced
1/4 red onion, diced
2 limes, juiced
1 bunch cilantro, chopped
1/4 tsp. salt
1/4 tsp. black pepper
Place the avocados in a mixing bowl and smash with a fork. You're looking for a chunky dip not a paste.
Add the remaining ingredients and stir until well combined. Taste and add more lime juice if needed.
Store leftovers in the fridge for 1-2 days. The lime juice will help prevent the avocado from browning. Another tip to prevent oxidation is to cover the bowl letting the wrap set directly onto the dip.
