Time: 20 minutes + time to set
Crust layer
1/2 cup dates, pitted & soaked
1/2 cup hazelnuts
1/2 cup almonds
2 tbsp. coconut butter
1/4 cup cacao powder
2 tbsp. maple syrup or honey
1/4 tsp. salt
Fudgey layer
1/2 cup peanut butter
1/2 cup coconut flour
1/4 cup coconut oil
1/4 cup cacao powder
2 tbsp. maple syrup or honey
Peanut butter drizzle
Pit the dates and soak in water for 10 - 20 minutes, until soft.
Prepare a Tupperware or small dish with parchment paper. Set aside.
To make the crust - Add all crust ingredients to a food processor or blender. If using a food processor, mix until well combined and you have a slightly sticky consistency. If using a blender, pulse the mixture until well combined and the nuts have broken down into a small pieces.
Transfer the mixture into the bottom of your prepared dish. Use your hands or a spatula to press the mixture into an even layer.
Rinse your food processor / blender to prepare for the filling.
To make the fudgey brownie layer - add all ingredients to your food processor / blender (either will work). Mix until smooth and combined.
Transfer the mixture on top of the crust layer.
Use a spatula to create a thin, even layer. Tap the Tupperware on the counter a few times to even it out.
To make the peanut butter drizzle - use a spoon to drizzle smooth peanut butter on top of the brownie layer.
Transfer your brownies into the freezer and let set until firm.
Cut the brownies into bars. Slice and serve! Let thaw slightly!
Store 7 - 10 days in the freezer!
