Oat-Free Granola



Vegan I Gluten Free


Serves: 4 cups

Time: 2 hours 30 minutes


1 cup almonds 1 cup walnuts 1/2 cup pecans 1/2 cup cashews 3/4 cup maple syrup  2 tbsp. coconut oil, melted 1 1/2 tbsp. pure vanilla extract 1 tbsp. cinnamon 1/2 tsp. salt 1/2 cup unsweetened coconut flakes 2 tbsp. sun flower seeds 2 tbsp. pumpkin seeds 1/2 cup raisons 

Preheat the oven to 225F. Line a large baking sheet with parchment paper.  Place all nuts into a food processor and pulse (5-7 times) until the nuts are beginning to break down. Add the maple syrup, coconut oil, vanilla, cinnamon, and salt. Pulse until well combined and the nuts are about the size of oats. Transfer the mixture into a large bowl and add the coconut flakes, sun flower seeds, and pumpkin seeds using a spatula to mix.  Spread the mixture in a single layer onto the baking sheet. Place in the oven for 1 hour and 30 minutes, stirring occasionally. Then turn the oven up to 250 degrees for an additional 25 minutes.  Remove from the oven and stir in the raisons. Let cool at room temperature for 30 minutes before serving or storing.
