Looking for a healthy onion ring recipe?! I'm serving you something delicious! These baked, vegan, gluten-free, guilt-free onion rings are your solution. These magic 'Os' are simple to make and I use wholesome ingredients, ensuring the recipe supports a healthy lifestyle.
Vegan I Gluten Free
Serves: 2 - 4
Time: 45 minutes
2 yellow onions, sliced in rings
Batter
1/3 cup buckwheat flour
1/4 tsp. chili powder
1/4 tsp. paprika
1/4 tsp. garlic powder
Salt and pepper to taste
1/2 cup coconut milk
Outer Coating
1/2 cup almonds, crushed*
1/2 cup cashews, crushed*
1/4 tsp. chili powder
1/4 tsp. dried thyme
1/4 tsp. turmeric powder
Salt & pepper to taste
*Add the nuts to a blender or food processor and pulse until broken down into small, fine pieces but larger than a powder.
Preheat the oven to 350F. Line a baking sheet with a silicone mat or parchment paper. Set aside.
Remove the skin and ends from the onions. Cutting parallel to the ends, slice the onion in 1/2 inch pieces. Gently separate the slices into rings. Set aside.
Mix the dry batter ingredients together in a mixing bowl. Stir to combine. Add the coconut milk and mix until well combined. Adjust consistency with more flour or liquid. You are looking for a smooth and thick mixture. Set aside.
Add the outer coating ingredients to a second mixing bowl. This will serve as your 'bread crumbs'. Stir to combine.
Take the slices of onions and working one at time coat them in the batter. Over a plate sprinkle them with the outer coating mixture.
Note: I found sprinkling the onions with the outer coating mixture worked better than dipping the onion into the mixture. As batter would run off into the 'bread crumb' bowl it would start to clump together.
Place the coated onions on the prepared baking sheet.
Bake for 20 - 25 minutes, until golden brown and crispy.
Let cool slightly and serve with your favorite dipping sauce - like this homemade ketchup!
Best served fresh or store 1 day in the fridge & reheat in the oven.
