Raw I Vegan I Gluten Free

Time: 15 minutes
Chia Pudding
1 cup coconut milk
1/4 cup chia seeds (or basil seeds)
1/2 lime, juiced
1 tsp. coconut blossom sugar
1/8 tsp. salt
Smoothie Layer
1 mango
2 frozen bananas
Toppings
Sliced mango
Sliced banana
Sliced oranges
Mint
Maple syrup or honey
In a small mixing bowl combine all the chia pudding ingredients. Stir well, breaking up any clumps. Set in the fridge to thicken, ~10+ minutes.
Add your smoothie ingredients to a blender and mix on medium-high speed until smooth and creamy.
Prepare your toppings - slicing fruit into small pieces.
In the bottom of your serving glasses, divide the smoothie evenly. Layer the chia pudding on top. Decorate with your fruit slices and coconut shreds.
Enjoy!
Store leftovers 1 - 2 days in the fridge.
