This simple and easy snack / dessert is everyone's favorite combination of banana, peanut butter & chocolate. Homemaking your nut butter and chocolate takes less than 5 minutes and keeps your ingredients clean and chemical/preservative free! If you choose store bought - make sure to read the ingredient labels! Enjoy this tasty treat!
Vegan I Gluten Free
Serves: ~15 mini sandwiches
Time: 20 minutes
3 large bananas, sliced
Peanut Butter
2 cups roasted peanuts
1/4 cup coconut oil, melted
2 tbsp. honey or maple syrup
1 tsp. cinnamon
1/4 tsp. sea salt
Chocolate Layer
1/4 cup coconut oil, melted
3 tbsp. cacao powder
2 tbsp. maple syrup or honey
To make the peanut butter - add all the peanut butter ingredients to a blender and mix on medium-high speed until smooth and creamy. Use a spatula to scrape down the sides as needed.
Peel and slice the bananas. Spoon a bit of peanut butter between 2 slices. Place the 'sandwiches' on a tray lined with a silicone mat or parchment paper.
Place the peanut butter sandwiches in the freezer to cool while you prepare the chocolate.
To make the chocolate - In a small mixing bowl add all the chocolate ingredients. Stir to combine. Place the bowl of chocolate in the fridge for 5 - 10 minutes to thicken slightly. Stir as needed.
Use a spoon to drizzle chocolate over each banana sandwich.
Sprinkle with coconut flakes or crushed nuts.
Place the banana sandwiches back in the fridge or freezer for the chocolate to finish setting.
Serve or store in the fridge or freezer!
