Time: 10 minutes + soaking time


1 cup coconut milk

1/4 of a fresh red dragon fruit

1/4 cup chia (or basil) seeds

1/2 tsp. vanilla (optional)

Maple syrup or honey drizzle

Add the coconut milk and dragon fruit slices to a blender and mix on medium speed until well combined and vibrant.


Stir the seeds into the liquid. Let the mixture rest 5 minutes, then stir again, breaking up any clumps.


Store the mixture in the fridge until the seeds have expanded or over night.


Note: If the seeds absorb all the liquid, stir in more coconut milk or water.


Divide the chia pudding between 2 glasses and add your favorite toppings.
