200-250g pumpkin, steamed
1 cup oats
1 1/2 cups coconut milk
1 tsp. vanilla (optional)
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground clove
1/4 tsp. salt
Toppings
Maple syrup or honey drizzle
Pumpkin seeds
Seed and remove the skin from the pumpkin. Slice into 1/2 inch thick pieces and steam for 10 - 12 minutes, until tender.
Add all ingredients to a sauce pan and bring to a boil over medium-high heat. Mash the pumpkin into a puree. Once boiling, reduce the heat to low and simmer 4 - 6 minutes, until the oats are tender.
Add more liquid to adjust consistency, depending on how you prefer the texture of your oats (more runny or thick).
Transfer your oat mixture to a bowl and garnish with your favorite toppings.
