Simple & Sweet Granola



This vegan, gluten-free granola recipe uses simple and wholesome ingredients. It's easy to make and offers more health benefits than store bought granolas (that are often loaded with sugars). This warming and nutty granola goes great on top of your smoothies, papaya boats, chia puddings, or served with fresh fruit and nut-milk. Make a batch and store it for weekly breakfast, snacks or dessert toppings!


Vegan I Gluten Free


Serves: 2 - 3 cups

Time: 35 minutes


1/4 cup nut butter

2 tbsp. maple syrup or honey

2 tbsp. coconut oil

2 tsp. cinnamon

1/2 tsp. ground nutmeg

1/2 tsp. ground clove

1/2 tsp. salt


1 cup oats

1/3 cup unsweetened coconut flakes

1/2 cup almonds, crushed*


1/3 cup sunflower seeds

1/3 cup raisins


*You can use whole almonds and pulse them in a blender until they are in small pieces or you can use pre-sliced almonds.

Preheat the oven to 150C / 300F. Line a baking sheet with a silicone mat or parchment paper.


Mix the wet ingredients and spices in a mixing bowl. Stir well.


Add the oats, coconut flakes, and crushed almonds to the mixing bowl. Stir until evenly coated.


Spread the mixture in an even, thin layer on the baking sheet.



Bake in the oven 15-20 minutes, until golden brown. Stir half way through for even cooking. Tip: Keep a close eye on it so the nuts don't burn!


Remove from the oven and stir in the sunflower seeds and raisins. Let cool completely, then store in an airtight container for 3-5 days.
