Sunshine Chia & Smoothie Bowl

This smoothie bowl combination with chia seeds is the perfect way to start the day! A thick and creamy banana and peach nice cream bowl topped with soaked chia seeds and all your favorite toppings! Try this vegan breakfast smoothie bowl for extra power and nutrients!
Vegan I Gluten-free
Serves: 1
Time: 15 minutes
Chia Mixture
1/4 cup chia (or basil) seeds
1 cup coconut milk
1/2 tsp. vanilla (optional)
Smoothie Mixture
2 large frozen bananas
1 cup frozen peaches
1/2 mango
1/4 cup+ coconut milk
Toppings
1/2 mango, cubed
Walnuts

Add the chia mixture ingredients to a small mixing bowl and stir to combine. Break up any clumps. Let set in the fridge 10+ minutes. Adjust the consistency with more liquid or seeds.
Blend all smoothie ingredients together in a blender until smooth and thick. Adjust consistency with more liquid or frozen fruit.
Add your smoothie blend into a bowl. Top with the chia mixture & desired toppings.
