Serves: 16 crackers
Time: 30 minutes
1 cup quinoa
1/2 cup water
1 1/2 tbsp. coconut oil
1 tbsp. coconut sugar
2 tsp. cinnamon
1/2 tsp. salt

Preheat the oven to 180C/350F and line a baking sheet with a silicone mat or parchment paper. Set aside.
To prepare the quinoa - Add the quinoa to a blender and mix on medium-high speed until it’s a fine flour. Transfer to a mixing bowl.
To prepare the crackers - Add the remaining sweet or savory ingredients to the mixing bowl. Mix with your hands until well combined and a dough forms.
Place the dough on the prepared baking sheet. Lay another piece of parchment paper over the dough and using a rolling pin or glass jar roll it out into an even, thin layer, 1/4 - 1/2 inch thick.
Use a sharp knife to make rectangular impressions for the crackers. Cut all the way through, but leave the dough in place.
Bake 15 - 20 minutes, until golden brown.
To serve - Let cool and serve with sweet or savory dips or spreads.
To store - Best enjoyed fresh.
