Looking for a simple to prepare, healthy, plant-based snack?! These nutty and simply sweet energy bars are what you're seeking! I use whole, real and fresh ingredients so these bars keep you feeling full and satisfied. They'll encourage health optimization and offer potent nutrients! It's the perfect combination of sweet and salty with a crunch and gooey flavor! Make a batch and store them in your fridge/freezer for a healthy snack when cravings hit!
Vegan I Gluten Free
Serves: 8 - 10 bars
Time: 20 minutes + 4+ hours setting time
1 1/2 cup oats
3 tbsp. coconut oil
1 cup dates, pitted
2 tbsp. goji berries
1/2 cup hot water
1 cup almonds
3 tbsp. chia seeds
3 tbsp. cacao nibs
1/4 cup tahini or almond butter
2 tbsp. maple syrup or honey
1/4 - 1/2 tsp. salt
Preheat the oven to 180C/350F and line a baking sheet with a silicone mat or parchment paper. Line a 9x9 baking pan with a silicone mat or parchment paper.
To prepare the oats - Add the oats and coconut oil to the prepared baking sheet. Bake 12 - 15 minutes, until golden brown.
To prepare the mixture - Add the dates, goji berries and water to a food processor or blender. Mix until smooth and creamy. Add the remaining ingredients and mix on medium-high speed until a sticky dough-like texture is reached. Transfer the mixture to your 9x9 container.
Use a spatula to spread the mixture in an even layer.
Place the energy bars in the fridge or freezer to set, 4+ hours.
Once hardened into shape, use a sharp knife to cut the mixture into bars or squares.
To serve - Top with coconut shreds or goji berries and enjoy!
To store- Keep in the fridge up to 1 week and store in the freezer up to 1 month!
