Vegan I Gluten Free Serves: 1 pitcher
Time: 10 minutes + 1+ hour freezing time
1/2 seedless watermelon
3 cups water
2 limes, juiced
8-10 fresh mint leaves
1 tbsp. maple syrup (optional)
Line a baking sheet with a silicone mat.
Cut the watermelon from the rind, into cubes, and place on the baking sheet. Place in the freezer until frozen.
Place all ingredients in a blender and mix on medium until combined. To adjust the consistency add more/less water or ice.
Top with a fresh mint leaf and serve! Stores in the fridge for 1-2 days and can blend again with ice.
